UPDATE:
I was able to resolve the problem by adding this line to my wp-config:
define( ‘WP_MEMORY_LIMIT’, ‘256M’ );
What remains unclear to me is why the removal of WF created this issue.
Just found out they won’t provide support unless I buy the Pro version. And I need to know the answer to my questions before I buy the Pro version. So it looks like I’m stuck.

I’m not talking about the mailchimp fields at the Mailchimp site, I’m talking about the forms on my site that feed those fields. For example, can I create a form with a dropdown menu, and each option feeds a different value into a particular mailchimp field? Can I create a radio button menu, and the option the user clicks feeds that value into a mailchimp field? Thanks!

Instead of activating the plugin at the network level, I activate it at the subdomain level. It works fine then. This means each subdomain has to be activated individually, and can’t share quizzes, but that’s not a huge problem for me.
