2nd reorder category according to your need from products -> categories (drag and drop the categories)

We have not encountered such issues before. To be sure we just tested again with a new install on a WordPress 5.7 setup with PHP 7.3.
Can you please go to Tools->Site health->Info tab. Press the button Copy site info to clipboard and paste here or email us to [email protected]
