we suggest you to install this plugin: Email logs
this allows you to check all the email messages sent out by WordPress.
About the delay of the reminder email it should be related to the cronjob.
If your website doesn’t have very much traffic the WordPress cronjob could run rarely .. so our suggestion is to implement a cronjob at server level.

for the moment email field is required as the whole system is based on the user email address, in the future we’ll add the possibility to make this field optional.
