Oh, wow, it sounds like you’ve tried lots of things. The best tip I can give you here is to disable all plugins and switch the theme – if you try one but not the other, then there may still be conflicts happening.

So for some reason, it sounds like the on-hold status email isn’t sending when the order initially switches to on-hold.
The first thing to check is if the email is actually being sent or not – you can do that by installing the WP Mail Logging plugin, creating a new order, and then checking to see if the on-hold email is shown in the mail log. If the email doesn’t show up in the log, then it’s likely that another plugin or theme on your site is stopping the email from triggering.

The first most likely problem here is caching – so I’d recommend disabling any caching plugins that are enabled and then checking to make sure the correct number of products are displayed.

The best thing to do here is to check with the developers of the Gravity Forms plugin. Given that we haven’t seen any other issues with Stripe, they’ll have a better idea of where things are conflicting and how to solve it.

Okay, so you’re trying to remove all of the product from the Facebook sync. You’ve used the following PHP snippet, both as a snippet and within the functions.php:

That’s exactly as it should work: it’ll keep running in the background. Were the products removed from Facebook correctly?

As of a year or two back, the default WordPress editor is now the Gutenberg blocks editor:
But it doesn’t sound like you’re looking for the block editor, but a rich text editor. It sounds like there’s likely a plugin managing the editor – there are a bunch of different plugins that could be affecting this. Your best place to start is checking through your plugins and seeing if there is one related to editing – it’ll likely be disabled, and you’ll need to enable it.
